The Hakushu 12 yo, 43%.

Let’s start the new year 2022 in this blog with a whisky from Suntory’s mountain forest distillery Hakushu.

Hakushu means “white sand banks” named after the mineral deposits in the streams that feed the distillery. I believe that this fairly young Hakushu release is fully matured in American oak, please correct me if I’m wrong. 

Colour: Straw with a orange hue.

Nose: The nose is extremely green and grassy – superbly fresh indeed. Sniffing crushed dried mint from the palm of your hand. Also some bitter new oak & toasted oak with some minty fudge. There’s some peat smoke, but I must emphasize that the smokiness of this dram is not at all like the coastal Scottish smokiness, it is very gentle and well integrated. The green apples and pears bring Glenfiddich strongly to my mind, which is in my opinion always a pleasant thing. 

Palate: Spicy bitter oak. Citrus fruits with a mixture of herbs. Herbal ice tea. Yes, this is a very zesty and fresh dram. Warning to the sweet tooths out there, this is not in any way a sweet dram. Peat smoke is there and it’s bubbling under. Smoke is even more discreet on the palate than on the nose. Somehow this dram reminds me of some zesty bone dry Gewürztraminer white wines, perhaps due to some acidic apricot stone fruit notes. 

Finish: Quite short, notes of green tea and bitter oak.

Comments: Fresh and excellent aperitive for the spring. It is literally a verdant whisky as the Suntory’s slogan states. Great job from Japan.

Mortlach, Douglas Laing's Old Particular 12 years old. Distilled December 2002 and bottled February 2015. Refill Hogshead. Cask number DL 10696. Number of bottles: 348. 48.4 % Vol.

It was a beautiful day in May 2015 when I bought this bottle in the Whiskyshop Dufftown, just a stone’s throw away from the distillery itself where we had a stroll after shopping in the whisky shop. A dozen of blackbirds were singing in the distillery courtyard in the setting sun – Oh those were the days it’s almost painful how much I miss traveling…

Colour: Gold

Nose: Ok, let’s have a sniff. The first thing that hits you is a strong vanilla flavour, almost like an ice cream sensation.  Followed by waxy honeycomb and fizzy citrus. A pinch of dried red berries such as strawberry and red currant, especially strawberry jam comes to my mind. Well, that was not quite something that I was expecting from a dram from the beast of Dufftown. No beef stock, no sulphury notes, no meatiness, you know. This dram shows just how versatile and exciting fun single cask bottlings can be. 

Palate: Very nice thick and oily consistency, you can almost chew the dram. Starts with notes of salted butter and zesty lime. Nice sweet notes of Crème brûlée and Scottish fudge. Ahaa, now there’s Mortlach’s signature meatiness appearing – it’s funky in a discreet way, but it’s still there. No sulphur detected which is good news in this matter, don’t get me wrong, there is a time and a place for the sulphur in whisky. I just love the palate, it’s extremely palatable.

Finish: Scottish fudge and cooling mint.

As I said, quite a different Mortlach but terrific stuff anyways.

Royal Lochnagar, Cadenhead’s. Aged 12 years. 58,5 %

Erm, it’s been ages since my last encounter to this blog. Some might speculate that my whisky vault has dried out – that’s not the case here, quite the opposite fortunately.

So, let’s start a new chapter in this blog with a highlander, from the neighborhood of the Balmoral Castle. I’ve visited the distillery once (just the visitor center) – two years ago, to be precise. A beautiful little distillery, as you may observe from the picture. I bought this miniature (among a few others) in the Berlin’s Cadenhead’s shop back in 2012, which means this royal liquid was distilled not later than 1999.

Color: Gold medal.

Nose: Very chalky & mineral to begin with. Pavement gravel after pouring rain. River bank clay from the River Dee plus some crème brûlée.  Citric notes in the form of ripe grapefruit, seasoned with muscovado sugar. Quite pungent stuff, enough to burn your nostril hair if you’re not careful. Adding water will certainly help.

Palate: At arrival sharp citric notes, in a little while melting butter on mashed potatoes. Ginger with barley sugar. Some herbal notes, rosemary perhaps. Water brings out notes of honeydew and vanilla. Turns metallic/tannic with water, especially in the finish.

Finish: Herbal, lemony, over-brewed tea. Short.

Quite an average dram, to be honest.

Mmm, hace mucho tiempo que no escribo en este blog. Uno podría sospechar que mi stock de whiskies se ha acabado - eso no es el caso en esta ocasión, todo lo contrario.

Así que vamos a empezar una nueva etapa en este blog con un whisky highlander, desde la vecindad del castillo de Balmoral. He estado en la destilería una vez (solo en el centro de visitantes) - hace dos años, para ser preciso. Es una destilería pequeña y hermosa, como se puede ver en la foto. Compré esta botella miniatura en la tienda Cadenhead´s en Berlin en 2012, así que este whisky real ha sido destilado no después que 1999.

Color: Medalla de oro.

Nariz: Primero está muy calcáreo y mineral. Camino de grava después de llover mucho. Barro de la ribera del Rio Dee y además un poco de crème brûlée. Notas cítricas en la forma de pomelo maduro, con un poco de azúcar muscovado. Bastante acre, está lo suficiente picante como para quemarte los pelos de la nariz si no tieness cuidado. Añadirle un poco de agua ayuda mucho.

Paladar: Unas picantes notas cítricas pero después de un rato, mantequilla fundente sobre puré de patata.  Jengibre con azúcar cebada. Unas notas de hierbas, a lo mejor romero. Con agua aparecen notas de melon chino y vainilla. Agua lo hace más metálico/tánico, especialmente en el final.

Final: Aromas de hierbas, con sabor a limón, té demasiado fuerte. Corto.

Un trago bastante promedio, para ser honesto.

Highland Park Saint Magnus, 12 years old 2nd Edition. 1998 Vintage, bottled 2010. 11 994 bottles. 55 %

As the header suggests, this is the second release in the Magnus series from the Highland Park, celebrating the Viking history and the Nordic heritage of the Orkney Isles. The other two bottlings in the series were Earl Magnus 15 Year Old 1st Edition and Earl Haakon 18 Year Old 3rd Edition. Saint Magnus (the whisky, not the earl) was mainly matured in sherry seasoned American oak casks along with refill bourbon casks.

Color: Amber.

Nose: Immediately you get sucked into a world of good, old sherry; some spices, cinnamon to start with, then Belgian pralines and full of Jerez oloroso sherry. Tarry smoky notes make it very cozy. Notes of Pedro Ximenez sherry vinegar add some edge and sharpness to the balance. Not forgetting the rain-moistened pebble stones.

Palate: It most certainly delivers all that the nose promises. Big tannins in the front - in other words, it is fairly dry. Full-bodied, cocoa powder and candied orange peel. Oloroso sherry, which turns with time into sweet Pedro Ximenez sherry. Cinnamon with a capital C. Towards the end some lovely salty liquorice. After a good half an hour - railway tracks on a hot summer day (tar), from the horizon carried by the wind, a puff of kiln smoke. Water brings out mixed herbs that add a new dimension to the palate, but still I slightly prefer this one neat.

Finish: Semi dry, long - from a dry, nutty oloroso to a sweet PX.

Quite magnificent oloroso-driven HP. Kudos to Kirkwall!

Highland Park Saint Magnus, 12 años, segunda edición. 1998 Vintage, embotellado 2010. 11 994 botellas. 55 %

Como se pone en el encabezado, ésta es la segunda edición en la serie Magnus de Highland Park. La serie celebra la historia de los vikingos y la herencia nórdica de las Islas Órcadas. Las previas ediciones en esta serie fueron Earl Magnus 15 años (primera edición) y Earl Haakon 18 años (tercera edición). Saint Magnus (el whisky, no el conde) fue madurado en mayor parte en barriles de roble americano sazonados de jerez y también en barriles de bourbon recargados.

Color: Ámbar.

Nariz: De inmediato entras en un mundo de buen jerez añejado; algunas notas de especias, al empezar canela, luego pralinés belgas y mucho jerez oloroso. Notas ahumadas de brea lo hacen muy acogedora. Notas de vinagre de jerez PX añaden unos toques punzantes y ácidos en el equilibrio. También hay unas notas de guijarros mojados en la lluvia.


Paladar: Sin duda llega a la altura de las expectativas después de la nariz. Primero hay grandes taninos - en otras palabras, está bastante seco. De mucho cuerpo, cacao en polvo y cáscara de naranja confitada. Jerez oloroso que se transforma con tiempo en dulce jerez Pedro Ximemez. Canela con una mayúscula C. Hacia el final aparece un poco de agradable regaliz salado. Después de una buena media hora – vía férrea en un día caluroso de verano (brea), desde el horizonte llevada por el viento, una nube de humo de kiln. Agua hace que aparezcan hierbas mixtas y eso añade una nueva dimensión al paladar, pero aun así, prefiero un poco la versión pura.

Final: Semi seco, largo - desde un seco jerez oloroso con sabor a nuez hasta un dulce PX.

Bastante magnífico HP que tiene influencias de jerez oloroso. ¡Bien hecho Kirkwall!

Highland Park, Single Cask Series. Juhlaviski – Onnittelut 100-vuotiaalle Suomelle Orkneyn saarelta (in English: Celebration whisky - Congratulations to Finland on the 100th anniversary from Orkney island). Distilled 2004, bottled 2016. 12 years old. 1st fill European sherry puncheon, cask no. 1536. Limited to 636 bottles. 59,2 %

Finland is celebrating today its 100th anniversary of independence, so I think the perfect dram for the occasion is this HP’s special single cask bottling.

Color: Mahogany.

Nose: Robust with obvious oloroso sherry oak. Very gentle peat smoke hovering in the distance. Nice spiciness indicates of an active cask at play. Needs time in the glass to fully open up. After a while, as it developes (with the help of water), sweet fruity elements appear with some notes of burnt caramel.

Palate: Complex. High cocoa dark chocolate, orange peel / bitter oranges to start with. Definitely needs some water, without it the taste is slightly closed.  Water brings out herbal elements, thyme and maybe a touch of rosemary and also some pine sap. There is also a nutty side to this dram, walnuts and tannic walnut skin, which draw things to a drier ground. The distillery character honey adds sweet balance to the palate.

Finish: Dry. Medium roasted coffee and honey in a medium length manner.

Good stuff but not epic.


So there you go, put on Jean Sibelius´s Finlandia, pour yourself a dram and enjoy.

Highland Park, Single Cask Series. Destilado en 2004, embotellado en 2016. Añejado 12 años. 1st fill European Sherry Puncheon, barril número 1536. Limitado a 636 botellas. 59,2 %

Hoy Finlandia celebra su centenario de la independencia así que pienso que la perfecta copa para la ocasión es el whisky especial single cask de HP.

Color: Caoba.

Nariz: Robusta con obvio roble de jerez oloroso. Humo de turba muy ligero en la distancia. Agradables especias indican que ha estado en un barril activo. Necesita tiempo en la copa para abrirse bien. Después de un rato, como está desarrollando (con la ayuda de agua), unos elementos afrutados aparecen con unas notas de caramel quemado.

Paladar: Complejo. Chocolate negro intenso, cáscara de naranja / naranja amarga para empezar. Definitivamente necesita un poco de agua, sin ella está un poco cerrado. El agua hace que aparezcan elementos herbales, tomillo y a lo mejor un toque de romero y también un poco de savia de pino. Además hay un lado diferente de esta copa, nueces y su cáscara tánica. Estos elementos lo hacen más seco. Miel, el carácter de la destilería, añade dulzura y equilibrio en el paladar.

Final: Seco. Café medio tostado y miel de una manera medio larga.

Buena copa pero no épica.

Pues bien, pon  Finlandia de Jean Sibelius y sírvete una copa y disfruta.

SPRINGBANK VERSUS SPRINGBANK

Matured in Rundlets and Kilderkins, which are small 60 and 80 litre casks. 49,4%.

Springbank is one of my favorite distilleries and that's why these two Springbanks have an honor to be the first reviews in my blog.

Just in case you didn't know, Springbank, founded in 1828, is the only distillery in Scotland where all production is done under one roof, from malting their own barley to bottling. It is one of the few remaining family owned distilleries in Scotland.


Nose: Impact of smoke which disappears quickly into the background giving room for coffee, leather, cloves, fudge and vanilla.

Palate: Not as sweet as the nose suggests but still very nice, spiciness á la cloves, cinnamon, espresso, fudge and a little bit of liquorice, fairly dry.

Finish: Strong spiciness, cinnamon, cafe latte.

Springbank 12 yo Cask Strenght, batch/edition 2 .60% Fresh Sherry Hogsheads & 40% Refill Sherry Butts. 58,5%.

Nose: Strong meaty and sweet sherry, juicy fresh sultanas, dark fruits, figs, plums, some smoke lurking in the background.

Palate: Oily, delicious sweet sherry, slightly sour, smoke hovering all around, little bit of black pepper, fudge, wood spices.

Finish: Spicy and long.

Comments: Two excellent, fairly young Springbanks which offer great bang for your buck. From these two I prefer the 12 yo because I'm a big fan of sherried whiskies, but hey - it's all a matter of taste.

SPRINGBANK VERSUS SPRINGBANK

Springbank está entre mis destilerías favoritas y por eso estos dos Springbanks tienen el honor de ser las primeras reseñas en mi blog.

Por si no lo sabíais, Springbank, fundada en 1828, es la única destilería en Escocia en que toda la producción del whisky es hecho bajo el mismo techo, desde la transformación de su propia cebada en malta hasta el embotellamiento. Es una de las últimas destilerías de propiedad familiar en Escocia.

Springbank Rundlets & Kilderkins 10 yo, 9 000 botellas. Madurado en Rundlets&Kilderkins que son pequeños barriles de 60 y 80 litros. 49,4%.

Nariz: Impacto de humo que desaparece rápidamente al fondo dando espacio al café, cuero, clavo, dulce de leche y vainilla.

Paladar: No tan dulce como sugiere la nariz pero aún muy agradable, especias como clavo y canela, expresso, dulce de leche y un poco de regaliz, bastante seco.

Final: Especias fuertes, canela, café latte.

Springbank 12 yo Cask Strenght, edición 2. 60% Fresh Sherry Hogsheads & 40% Refill Sherry Butts. 58,5%.

Nariz: Fuerte jerez jugoso y dulce, pasas sultanas, frutas oscuras, higos, ciruelas, un poco de humo merodeando en el fondo.

Paladar: Oleaginoso, jerez dulce y delicioso, un poco amargo, humo rondando por todas partes, un poco de pimienta negra, dulce de leche, cinnamon.

Final: Largo con especias.

Comentarios: Dos Springbanks excelentes y bastante jóvenes que ofrecen mucho por tu dinero.
De estos dos whiskies prefiero el de 12 años porque soy un gran aficionado de whiskies madurados en barriles de jerez, pero ¡hey! - sobre gustos no hay nada escrito.
